2 tsp Piment d’Ville
1 clove garlic, roughly chopped
1 can garbanzo beans, drained
Juice of half a lemon
Salt to taste
In a small pan, dry toast the Piment d’Ville and garlic clove on medium heat until it gives off a rich aroma. Agitate the pan to ensure it doesn’t burn. Add 2 Tbsp olive oil to the pan and turn off the heat. Let this rest for a few minutes to let the flavor and color of PDV bleed into the oil.
Add garbanzo beans to a food processor. While running, slowly add the PDV/garlic/oil mixture to the beans with a solid pinch of salt. Next, add lemon juice. Process until smooth, adding olive oil (or some water) to reach desired consistency and creaminess. Add salt to taste. Garnish with Piment d’Ville and serve with pita bread or raw veggies.
